Kitchary One-Pot Dish

Kitchary is known as Ayurvedic easy to digest, purifying and cleansing the system dish. Used in panchakarma, to rejuvenate and remove the toxins stored in the body. While in India I was eating it everyday for 3 months!!! And I still like it:) Here is a simple one-pot recipe made in the rice-cooker.

- 1/4 cup of moong split dal (yellow)

- 1/4 cup of basmati rice

- 1 zucchini

- 2 carrots

- 2 celery sticks

- 2 tsp of fresh ginger

- 1 tsp of turmeric

- 1 tsp of cumin seeds

- 1/2 tsp of coriander powder

- 1/2 tsp of cumin powder

- 3 tsp of Himalayan salt

- 2 tbsp of olive oil or ghee

- 1 lemon (juice it)

- cilantro to garnish

Soak moong for at least 30 min, drain the water. Wash it with rice and place in the rice-cooker. Add all chopped veggies and spices and double the water. Let it cook on its own, while you are meditating or doing some other things. Once done add some olive oil or ghee, lemon juice and cilantro.
